Coastal Mediterranean Salad

Roasted Garlic Tuna and Pesto Crostini

Ingredients:

1 (4.5 oz.) Can – StarKist Selects Yellowfin Marinated Tuna – Roasted Garlic, chunked and oil mixed in

1 French baguette, sliced thinly into 1⁄2-inch slices

1⁄2 jar (8 oz.) prepared pesto

1⁄2 cup crumbled feta cheese

Optional: thinly sliced roasted red pepper

Directions:

Toast bread on both sides. Spread approximately 1⁄2 – 1 tsp. of prepared pesto on each slice of bread.

Top with approximately 1 tsp. crumbled feta cheese and 1 tsp. of tuna.

Place under broiler and cook just until cheese begins to soften and brown slightly. Garnish with roasted red pepper, if desired.

Albacore and Asparagus Pasta

Ingredients:

2 cans (4.5 oz.) StarKist Selects Solid Albacore in Extra Virgin Olive Oil

1 Tbsp. extra virgin olive oil, ½ cup diced onion, ½ tsp. minced garlic

8 oz. sliced mushrooms, chopped, 2 cups, 1-inch pieces asparagus

1 cup jarred arrabiata pasta sauce

1 lb. orecchiette pasta, 1 cup shredded Italian cheese blend

Directions:

Heat olive oil in a medium sauce pan. Add onion and garlic and sauté until soft. Add mushrooms and cook until lightly browned and no liquid is in the pan.

Meanwhile, heat a large pot of salted water to boiling. Stir in pasta and cook according to package directions. During the last minute of cooking add the asparagus. When done, drain and place back in the pot.

Stir in the mushroom mixture, chunked tuna and pasta sauce. Place in a large bowl and top with the cheese blend.

Coastal Mediterranean Salad

Ingredients:

1 (4.5 oz.) Can – StarKist Selects Yellowfin Marinated Tuna – Lemon Dill

4 cups mixed baby greens

1 red pepper, sliced, 12 Kalamata olives

1⁄2 cup canned cannellini beans, rinsed and drained

8 marinated artichoke quarters, Chopped parsley

Directions:

Place 2 cups salad greens on plates.

Add 1⁄2 red pepper, 6 Kalamata olives, 1⁄4 cup cannellini beans and 4 artichoke quarters on top of salad.

Top with half can of tuna and sprinkle with chopped parsley
