So Exactly What is Sumac?

Sumac, also spelled sumach and sumaq, is a reddish-purple powder spice derived from crushed seeds of the sumac shrub. It is primarily used as a seasoning in Middle Eastern cuisine to add a tart, lemony taste to salads or meat.

In Arab cuisine, it is used as a garnish on meze dishes such as hummus and tashi, and is added to salads in the Levant, as well as being one of the main ingredients in Palestine’s national dish, musakhan. In Afghan, Armenian, Bangladeshi, Indian, Iranian, Jewish, Israeli, Kurdish and Pakistani cuisines, ground sumac is added to rice or kebab. In Azerbaijani, Central Asian, Jordanian and Turkish cuisines, it is added to salads, kebab and lahmajoun. It is also used in the spice mixture za’atar.

Sumac-Spiced Tomatoes and Chickpeas on Flatbread

Tomatoes and Chickpeas

2 garlic cloves, finely chopped, 1 teaspoon sumac, ½ teaspoon crushed red pepper flakes, ½ teaspoon ground coriander, ½ teaspoon ground cumin, 1 teaspoon kosher salt, 2 large heirloom tomatoes any color, thinly sliced, 1 15.5-ounce can chickpeas rinsed, 2 tablespoons red wine vinegar, freshly ground black pepper, 1 small shallot thinly sliced, ½ cup parsley leaves with tender stems, 3 tablespoons olive oil

Yogurt Sauce

1 Persian cucumber, peeled, chopped, ¾ cup plain yogurt ½ cup fresh mint coarsely chopped, ½ cup fresh parsley coarsely chopped, Hot sauce, Kosher salt and freshly ground black pepper

Flatbread and Assembly

¾ teaspoon baking powder, ½ teaspoon sugar, 2 cups all-purpose flour plus more for surface, 2 teaspoons kosher salt, 1 cup plain yogurt, 4 tablespoons olive oil plus more for drizzling, freshly ground black pepper

Oil for frying, Halloumi 2 blocks, cut into fat chips, Sumac 1 tsp, Ras el hanout 1/2 tsp, Natural yoghurt 100ml, Pomegranate molasses 2 tbsp, Pomegranate seeds 100g, Mint a handful, chopped.

  • Heat a shallow pool of oil in a large frying pan. Thoroughly pat the halloumi dry before adding to the pan and cook, turning until golden brown on all sides.
  • Tip into a bowl, add the sumac and toss.
  • Mix the ras el hanout with the yogurt and season with salt.
  • Put the fries on a platter, drizzle over the yogurt and pomegranate molasses then sprinkle with pomegranate seeds and mint. Eat immediately.
